I don’t know about you, but I can enjoy pasta any time of the year! The heavier, creamy pastas in the winter warm you right up, while a pesto or tomato pasta in the summer are so light and comforting.
David loves this pesto chicken pasta! His diet is very specific {both dairy free and gluten free} so it’s a fun challenge for me to try and find a variety of vibrant, nutritional meals for him to enjoy. This pasta checks all the boxes. I use gluten free Banza pasta, but you could substitute with any type of pasta you like. If he could have dairy I’d add Parmesan cheese. Tomatoes would also be delicious but they’re a bit acidic for him. You can have fun with this recipe and add other veggies or meats to make it your own!
Ingredients:
6-7 Chicken tenders
3/4 C Banza pasta
2 C Chicken stock
1/2 C Pine nuts
8 leaves Fresh basil
1 tsp Granulated garlic
1 C Fresh spinach
3 T Olive oil
Salt/pepper to taste
All ingredients go into the instant pot and set a manual timer for 15 minutes. Once the instant pot has de-pressurized, I blend the whole dish to an applesauce consistency for him {he needs to eat soft food}. But you could also remove the pasta and chicken before blending the sauce, then shred or cube the chicken and mix it all back together. Yum!

Also I have enjoyed gnocchi and butterfly pasta.
