One of our favorite meals is mexican meatloaf. I usually double the recipe so we can eat it for two nights and still have leftovers for lunch. I often cook only two-three times a week, and the rest of the time we eat leftovers or we’re out with friends. My husband found this recipe through cyclo-core {he loves cycling} and I adapted it slightly for our family.
1 pound lean ground turkey {7% fat}
1 medium onion, chopped
2 pieces ezekiel whole grain bread {shredded into small pieces}
1 packet taco seasoning
1 can black beans {don’t drain}
1 whole egg
dash of cumin
salt and pepper to taste
1 cup grated cheddar cheese
Preheat oven to *350. Mix all ingredients {except cheese} in a large bowl until well blended. I usually just use my hands–it’s messy but it works! Place mixture in loaf pan and bake 30 minutes. Then add cheese on top and bake another 30 minutes.
I serve the meatloaf on top of a bed of spinach and then top with salsa, sourcream {or chipotle dressing} and olives. Enjoy!

I just made this but subbed oats for the bread. I also added a whole diced bell pepper and olives right into the recipe. It turned out awesome! Thanks for the idea. I love the taco seasoning in it.
Do you suppose one could use flour tortilla or tortilla chips instead of bread?
Hi Amber! I think the bread really helps create the meatloaf texture. You could serve it with chips or tortillas–but it needs bread inside the mixture. xo

Looks really good! I do a faux Caesar salad that I came with when my daughter was little: in the bottom of a big salad bowl a little pile of salt one clove of garlic smash together with a fork until garlic has fine texture, juice of one lemon, olive oil, and a lot of fresh Parmesan cheese mix well add romaine lettuce toss together. great alone or top with grilled chicken (I use Monterey steak seasoning, yep it works well) I can’t imagine how many times we’ve had it, super fast!

Yummy yum! My kids usually turn their noses down at meatloaf (I think I overdid serving meatloaf years ago), but a meatloaf with taco seasoning and cheese? What’s not to love? I could even call it something other than “meatloaf” and they’d never know 😉

Fastest bread – 1 bottle/can of beer, 3 cups self rising flour, and 1/4 cup sugar. Mix, pour into a greased loaf pan and bake for an hour at 375.
