winner, winner, white chili dinner!

thank you, thank you for your recipe ideas! i am so inspired. tonight we are having white chili for dinner–recipe courtesy of Heather. Here’s the scoop…

WHITE CHICKEN CHILI

No kidding, this recipe is dump and heat, so it takes no more than 5 minutes! and it’s oh.so.good 🙂

In a large pot, empty:
a 48 oz. jar of Great Northern Beans-undrained (I use Randall brand),
1 jar of salsa (your favorite brand),
4 cups of sharp cheddar cheese;shredded,
chicken (I use 2 cans of chicken breast, drained, and break up the chunks with my fingers) or you can use some pre-cooked rotisserie chicken, shredded.

Heat all ingredients over medium-high heat until cheese is melted completely. I never thin this out because it’s a great consistency as is, but you can always add a bit of water or broth if you’d like it thinner.
I serve with green onions and sour cream as condiments and also love to scoop this up with fritos!

  5. I’ve been reading your blog since my sweetie bought me one of your necklaces with my little’s name on it (which I love by the way). I meant to post this earlier, but my friend just started a recipe blog http://www.nottoomanycooksinthekitchen.blogspot.com, that all of our friends will hopefully be posting easy recipes to. There are only a few there now, but next time you need an idea you can look there, if you didn’t get enough ideas from your post when you requested them ha!

    Here’s a super easy meal idea (which we are having tonight): put some boneless, skinless chicken breasts in a crock pot, add a jar of spaghetti sauce. (you could also add sliced mushrooms or other veggies if desired) Cook till chicken is done, shred the chicken a bit, serve over your fav pasta.

    One-Dish Chicken & Stuffing Bake
    From: Campbell’s Kitchen
    Prep: 15 minutes
    Bake: 30 minutes

    Serves: 6

    Ingredients:

    4 cups Pepperidge Farm® Herb Seasoned Stuffing
    6 skinless, boneless chicken breasts halves
    Paprika
    1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
    1/3 cup milk
    1 tbsp. chopped fresh parsley or 1 teaspoon dried parsley flakes

    Directions:

    Heat the oven to 400°F. Prepare the stuffing according to the package directions.

    Spoon the stuffing across the center of a 3-quart shallow baking dish. Place the chicken on either side of the stuffing. Sprinkle the chicken with the paprika.

    Stir the soup, milk and parsley in a small bowl. Pour the soup mixture over the chicken. Cover the baking dish.

    Bake for 30 minutes or until the chicken is cooked through.

    Tip: 4 cups of any variety of Pepperidge Farm® Stuffing will work in this recipe.

    Serving Suggestion: Serve with steamed sugar snap peas and a tossed green salad (Iceberg and Romaine). For dessert serve sliced peaches with whipped topping and a sprinkle of cinnamon.
