I wish I had an elegant response to this question, but honestly? Bunny cake. I have an April birthday and during my childhood, my mother worked for half a day in the kitchen to create a beautiful bunny-shaped cake with pink coconut in the ears and sprinkles for a nose. My mother is not the crafty type, so this was a special effort that she made for me every year. As an adult, I’ve missed it. I have finally started making one each year with my daughter and… I still love this cake. It’s 100% sentiment and happy memories and love. Happy birthday to you!

For my 25th birthday last year, my best friend threw me a surprise birthday party. She knew I didn’t like traditional cake and that my favorite unhealthy snack is cosmic brownies by little debbies, so she created a cake out of the cosmic brownies! It was so special and sooo good! 🙂

I grew up in Scotland and still love a good sponge cake with cream and raspberries in the middle and confectioner’s sugar sprinkled on the top! Glad that you are loving England! I always look forward to trips back home, even after all these years of living in the US.

Happy birthday! I just ordered the new family tree necklace (and sun drops earrings) for my wife because we just had our first boy! Anyway, red velvet cake with cream cheese icing is my favorite–my great grandmother would make it for me every birthday.

My favorite has always been Heath bar torte. Angel food cake, whipped cream with vanilla, powdered sugar, walnuts and crushed Heath bars. Yum!

When I taught school, I had a fabulous team leader who took such good care of all of us on her team…we lovingly called her “Mom” :)! She would make every person whatever kind of treat they wanted every year on their birthday. My favorite was her banana split cake…super yummy and super easy to make, but very time-consuming. A real labor of love.

My mom makes a wonderful layered dessert that I love! I don’t know the name of it, but its filled with a butter crust, jello, a cream cheese mixture, raspberries, and whipped cream. Oh, its so yummy!

Ice cream cakes! We used to get them as kids from B&R, but now we make our own since I am a vegan. My favorite uses Turtle Mountain’s Purely Decadent Turtle Trails. All I can say is it’s a good thing birthdays are only once a year cuz I just dig in with wild abandon, calories or not!

Happy Birthday Lisa! I don’t know if i could choose just one, i love all dessert equally. Right now i could go for some toffee cupcakes though. 🙂

My favorite birthday cake of all time is called Lazy Dazy Cake!

1 c. flour
1 tsp. baking powder
3/4 tsp. salt
2 eggs
1/2 c. milk
1 c. sugar
1 tbsp. butter
1/2 tsp. vanilla

Beat eggs, add sugar gradually. Beat until fluffy. Sift flour, salt, and baking powder. Add to egg mixture. Beat. Heat milk and butter, add vanilla. Add, beat slightly. Pour into greased 8 x 10 inch pan. Bake at 350 degrees for 30 minutes. When done spread with topping and brown under broiler.

TOPPING:

5 tbsp. brown sugar
3 tbsp. cream
3 tbsp. butter
1/2 c. coconut
1/2 c. pecans

Mix ingredients and beat until right consistency to spread.
