while steve and i were away for our anniversary we had the most delicious granola trifle {granola, yogurt and berries}. i was determined to make a low-sugar version when we got home. we’re eating phase 2 of the south beach diet right now–so we can have healthy carbs, but we’re avoiding sugar. this granola is full of oats and nuts–so it’s good carbs and protein and it’s so yummy!
mix all dry ingredients:
5 cups rolled oats
1 cup wheat germ
1 cup wheat chex cereal {crushed}
for nuts below i used a nut chopped to crush them into smaller pieces}
1/2 cup almonds
1/2 cup peacans
1/2 cup sunflower seeds
for the glaze, mix the following ingredients in a sauce pan over low heat until smooth
2 cups splenda
1/4 cup agave nectar
3 tablespoons vanilla extract
1/2 stick butter
salt to taste
cinnamon to taste
pour sauce over dry ingredients and mix well. sprinkle granola onto baking sheet and bake at 350* for 10-15 minutes or until golden. serve with yogurt and fresh berries.

Just a little info if you want to do some research…
splenda (like all artificial sweeteners) isn’t natural, it is actually chlorinated. You may want to try a stevia sweetener. The amounts are different, but it is a all natural sweetener that comes from a plant.

That pic looks so yummy! You might want to look into Splenda though. As I understand it, it is a chemical toxin that contains chlorine. I would just hate to see you trade sugar for a substance that could be a neurotoxin. A safe alternative might be Stevia or possibly Xylitol. Be well! 🙂

I warmed up a pita in a dry skillet, spread it with some yummy hummus and folded it up with some crispy lettuce and diced tomatoes. I was surprised how delicious it was and it kept me full all afternoon. Next time, I’m going to toss in some marinated artichoke hearts or sun dried tomatoes.
The last yummy thing we made was birthday cake…and soon to be banana bread. 🙂
Soulemama has an excellent, super-yummy, low-sugar, low-fat granola recipe on her blog in the tutorials. mmmmmm. Dry some sliced strawberries to add to it!

My summer favorite is strawberry spinach salad. It is so fresh and I cut the sugar called for dressing in half and notice no difference.
Mmmm, I made fish tacos:
Vegetarian fat free refried beans
Brown rice cooked with chicken stock and chili powder and cumin
Fresh tomato
Fresh bell pepper
Fresh avocado
Fresh onion
Spinach leaves
Salmon pan fried with a little cooking spray and salt and pepper.
All together in a fresh made tortilla, SO YUM.

Yum! I just bought a new jar of wheat germ I always forget how easy it is to add to anything. I never thought of adding it to my granola, silly me 🙂
I recently made this olive, tomato salad with ripped pieces of bread. For those low-carbing it you can omit the bread. It was sooooo good and it is found in this month’s BH & G magazine (with Michelle Obama on the cover). I tweaked it a little and it was delicious during our picnic last weekend. I can taste that balsamic vinegar now….mmmmmm!
